White Fish With Garlic And Thyme

Ingredients

2 (6 oz) skinless cod fillets, about 1” thick (or haddock, snapper, etc.)

½ t kosher salt

1/8 t pepper

1 T ghee

3 T organic butter, cut into ½” cubes

2 garlic cloves, crushed and peeled

4 sprigs of Thyme

Lemon wedges

Directions:

Pat dry all sides of the fish with paper towels. Sprinkle all sides with salt and pepper.

Heat ghee in a 12-inch nonstick pan over medium high heat until melted. Reduce heat

to medium and place the fillets skin side down in the skillet. Cook without moving until

you have a golden-brown sear, about 4-5 minutes.

Using 2 spatulas flip the fillets cook for one minute scatter butter around fillets when

butter is melted, tilt skillet slightly toward you so the butter pools in front of the pan and

use a large spoon, scoop up melted butter and pour over fillets repeatedly for 15

seconds. Place the skillet flat on the burner and continue to cook for 30 seconds longer.

Tilt skillet and base for 15 seconds place skillet flat on the burner and take the

temperature of the thickest part of each filet can hit continue to alternate basting and

cooking until the fillet registers 130°. Add garlic and thyme sprigs into skillet at the 12:00

position. When spattering has subsided continue to baste and cook until the fillet

registers 140° at the thickest part total cooking time will be 8 to 10 minutes.

Transfer fillets to individual plates discard the garlic tap each fillet with at that time sprig

pour butter over fillets and serve with lemon wedges.
