Amazing Flavor & Comfort Shine In Mom’s Hot German Potato Salad

Ingredients

6 medium potatoes

½ lb bacon

¾ cup onion – chopped

2 TBS Rice flour

1 – 2 TBS sugar

1½ tsp salt

½ tsp celery seeds

Dash pepper

¾ cup water

⅓ cup vinegar

Directions

Boil potatoes with skin on for 20 minutes. When cool, peel skins and slice thin.

Fry bacon slowly in skillet. Remove bacon from pan – save fat. Crumble bacon when

cool.

Sauté chopped onion in bacon fat until golden brown. Blend in flour, sugar, salt, celery

seeds, and pepper. Cook over low heat, stirring until smooth and bubbly. Remove from

heat and stir in water and vinegar. Bring to boil, stirring constantly. Boil for 1 minute.

Carefully stir in the potatoes and crumbled bacon. Remove from heat.

Cover and let stand until ready to serve.

Serves 6 – 8
