Brenda's Minestrone Stew

Get Ready To Warm Up And Enjoy The Deliciousness Of Brenda’s Minestrone Stew!

Ingredients:

2 Medium Onions, chopped

½ head Celery (I use the inside portion with leaves), chopped

6 Garlic cloves, chopped

3-6 carrots, sliced or chopped

1 Bunch Green Beans, cut ½” (or 2 cans added later)

Ghee, butter, or other animal fat 1-2 tablespoons

2 Cans white beans (I use cannellini)

2 Cans Green Beans if not using fresh

1 Can Kidney Bean (I smash these, optional)

1 lg can petite chopped tomatoes

2 bags Spinach or another leafy green veggie, chopped

Stock or broth optional, 16 ounces

Parmesan rind (optional)

Salt and Pepper

Directions:

Sauté onions, celery, carrots, fresh green beans, & garlic until slightly softened in ghee.

Salt and pepper these with about a teaspoon of sea salt and ½ teaspoon of pepper. I

use cayenne for the spice and health benefits.

Add the beans, tomatoes, greens, and rind to the pot and heat through.

At this point I will add 16 ounces of chicken stock. You can add some water or other

broth. Adding the stock gets me 10 good bowls of stew. Keeping it thicker is delicious,

too!

Taste and add more spice to taste.

This can be easily frozen in Ziplock freezer bags. Quart size is good for one serving.
