Salsa Chicken

Comforting and Flavorful, This Salsa Chicken Dish Keeps It Lean And Healthy!

Ingredients

3 C Cooked Rice

1 C slivered almonds

8 chicken thighs, skinless

2 garlic cloves

1 C Salsa

¼ C Water

2 T dried currants (or raisins)

1 T honey

¾ t cumin

½ t cinnamon

Directions

Cook rice according to directions.

Heat ghee/fat in large skillet over medium heat until hot. Add almonds and cook until golden brown & remove from skillet, set aside.

Add garlic and chicken to skillet & cook for 4-5 minutes until chicken is browned on each side.

In a medium bowl, combine the salsa and remaining ingredients & mix well. Add to the chicken and cook for 20 minutes or until chicken is done (no longer pink inside). Stir occasionally.

Serve salsa/chicken over rice and sprinkle almonds on top.
