A Healthy And Delicious Broccoli Mash Recipe
1 lb broccoli, chopped
1 sm white sweet potato (about ½ lb), peeled and chopped
3 garlic cloves
½ C full fat coconut milk
Chopped fresh parsley (garnish)
Steam broccoli, sweet potato & garlic until tender, about 15 minutes. Allow to cool for about 5 minutes.
Place vegetables and coconut milk in a blender or food processor. You may want to work in batches. Blend until creamy.
Season to taste with salt and pepper.
Garnish with parsley.
