A Recent Banana Nut Bread Recipe My Daughter Made
1/2 c butter, softened
1 c white or brown sugar
2 large eggs
2 cups of your favorite gluten-free flour (I used Cup 4 Cup)
1/2 t salt
1/2 t baking soda
1 1/2 cups mashed bananas (about three bananas)
1/2 c chopped pecans
Cream the butter and sugar. Add the eggs and beat well. Combine the dry ingredients and stir into creamed mixture alternately with the mashed bananas. Fold in the nuts last. Pour into a buttered loaf pan, let stand 20 minutes at room temperature, and then bake at 350 degrees for 45 minutes to an hour. Enjoy!
