Lemon Lavender Cookies

Looking For A Valentine’s Day Treat? Try These Delicious Lemon Lavender Cookies!

Makes about 30 cookies. Prep time is quick- 15 minutes. It’s possible the dough may need to be chilled. Oven 350°

Ingredients:

½ C butter, softened

1/3 C sugar

Zest from a medium lemon

1 T fresh lemon juice

¼ t sea salt

1 t dried lavender (may substitute rosemary)

1 ¼ C GF all-purpose flour + extra for rolling

Directions:

Preheat oven: 350° & line a baking sheet with parchment paper.

In mixer, cream the butter. Add sugar and beat until fluffy. Scrape the bowl’s sides, as necessary.

Add lemon zest, lavender, & lemon juice. Mix again.

Add flour & sea salt and mix until combined.

After mixing, press the dough together with your hands so that you can begin shaping.

Sprinkle flour onto your counter and use the space to turn the dough out.

Flatten dough in to a 1-inch disk (if the dough is sticky, wrap it & chill in fridge for 15-30 minutes until it’s firm).

Roll the dough out on a floured surface until it’s approximately ¼ inch thick.

Use your favorite cookie cutter to cut out your preferred shapes. Cookie cutters approximately 2” inches work best.

Place on a baking sheet & bake for 10 – 14 minutes or until edges are light brown.

Once baked, remove from the oven & place on a wire baking rack to cool.
