Enjoy This Chicken Bone Broth Recipe
Carcass from a 3 - 4 pounds roasted chicken
3 carrots, chopped
3 celery stalks, chopped
2 medium onions, quartered
4 garlic cloves, smashed
1-2 teaspoon Himalayan or sea salt
1 teaspoon whole peppercorns
2 bay leaves
3 sprigs fresh thyme or tarragon or rosemary
5-6 sprigs parsley
2 tablespoons organic apple cider vinegar
cold filtered water
Place all ingredients in a large crock-pot or stockpot. Cover with water. Bring to a boil, turn down to low/simmer covered. Simmer for 12-48 hours without stirring.
Remove from heat and allow to cool slightly. Discard solids and strain remainder in a bowl through a fine mesh colander. Let stock cool to room temperature, cover and chill.
Use within about 5 days or freeze up to 6 months.
TIP: freeze in portion sizes in zip lock bags or mason jars. Or freeze in ice cube trays to add into meals.
