Cauliflower Gnocchi Piccata

Serves 4

Ingredients

3 T Ghee (or other fat: Chicken/Pork/Duck, etc.)

1 Box (16 oz) Cauliflower Gnocchi (wholefoods brand)

3 T butter

2 T drained capers

2 T lemon juice

¼ t kosher salt

¼ t ground black pepper

5 packed cups of organic baby spinach

¼ C grated Parmigiano Reggiano

Directions

Heat ghee in a large, nonstick skillet over med/high heat. Once hot, add gnocchi in a

single layer and cook, undisturbed, until golden and crisp, about 2-3 minutes. Turn the

gnocchi and crisp the other side, undisturbed about 2-3 minutes.

Push gnocchi to one side of pan, then add butter and capers. Once butter has melted,

add lemon juice, salt, and pepper, and toss to combine.

Add spinach and sauté just until wilted, about 1 minute, then remove from heat. Sprinkle

with cheese and serve immediately.
