Spinach Salad With Bacon Dressing

Savor The Flavor And Nutritional Value Of This Spinach Salad With Bacon Dressing

 

Ingredients

3 Hard Boiled Eggs

8 Slices bacon

1 Red Onion, Small, sliced thin

8 OZ Mushrooms, sliced

8 OZ Baby Spinach, Washed Dried

3 tbsp. Reserved Bacon Grease

3 tbsp. Red Wine Vinegar

2 tsp. Sugar

1/2 tsp. Dijon Mustard

1 dash Salt

 

Directions

Cook eggs in simmering water for about 7 minutes. Drain and run cold water over them to cool.

 

Cook bacon until fat is rendered & bacon starts to crisp.

 

Pour bacon grease into pyrex glass measuring cup. Add the same amount of vinegar (or use the 3 T of each – I like more dressing). Mix in the seasonings until blended.

 

Layer the spinach, onions, mushrooms into the salad bowl, add the hot dressing and mix.

 

Top with sliced eggs and bacon.
